Crispy, spicy lady fingers

Craving fried foods but on a health spree? Go for these fried lady fingers coated with spices

Ingredients

500gm lady fingers (okra)

For the batter:

100gm besan (chick pea or Bengal gram flour)

1 garlic clove, crushed

1 tsp ginger-garlic paste

1 tsp salt

1 tsp cumin powder

1 tsp chilli powder

1 tsp chaat masala

Oil for deep-frying

METHOD

1. Cut the lady fingers, making 6 pieces from one lady finger.

2. Wipe each piece dry with a clean cloth to prevent it from getting jelly-like and sticky.

3. Mix all the ingredients for the batter until smooth. Add the lady fingers to the batter and work in to cover the lady fingers. Leave for 5 minutes only.

4. Deep fry over medium temperature (180 °C/350° F) until crisp (about 10 minutes). Serve.

Tip: Chaat masala can be purchased ready-made and is very spicy. Look for chaat masala containing black salt, dried mango and cumin seeds along with other spices.
