You might find many honey cake recipes online, but this one is quite simple and unique. This recipe is quite interesting as it does not use eggs, yoghurt, condensed milk, or flour. It has simple ingredients, which are easily available in your pantry that are mixed directly, all together in just one bowl.
Step-by-step guide
Preparation time - 15 minutes
Baking time - 25 to 30 minutes
Serves - 3 to 4
Ingredients
45 gms Butter
45 gms Milk
50 gms Honey
10 gms Caster sugar
90 gms Semolina
15 gms Nuts (chopped)
1/4 tsp Baking powder
Method
Preheat the oven to 180°C.
In a bowl, mix melted butter, milk, sugar, and honey until combined. Add semolina and baking powder to the mixture and whisk again.
Prepare your pan by applying melted butter. Pour the batter into the pan, level it out with a spatula and tap it lightly. Spread the chopped nuts over the batter evenly.
Place the mould in the preheated oven for 25 to 30 minutes or until the top is slightly golden brown.
Remove the cake from the oven and let it cool to room temperature for half an hour. Keep it covered to ensure the cake remains moist.
Once cooled, remove the cake from the mould and serve.
Tips
If you prefer a cake texture, you can replace 40 grams of semolina with 40 grams of refined flour.
You can use flavourless oil instead of melted butter.
Set the batter aside for 5 minutes to allow the semolina to soak the moisture and the batter to thicken.
You can add half of the nuts into the batter and use the other half as a garnish.
You can use any nuts of your choice.
Use a blender or food processor to chop the nuts roughly. Alternatively, you can place the nuts in a zip lock bag and crush them using a rolling pin.
If you prefer a cake with a moist crumb, you can soak it with honey or sugar syrup.
You can glaze the top of the baked cake with honey before cutting and serving.
