Pan-African recipe from Kenya: Kaimati or fried sweet dumplings

These treats are popular as desserts or snacks

Ingredients

2 cups flour

250 gms coconut milk powder

3 tbsp sugar

5 ml vanilla essence

50 ml coconut milk

1 tbsp clarified butter

1/2 cup water

1 tsp instant yeast

3 tbsp sugar

METHOD


Mix all-purpose flour, coconut milk powder, and sugar in a bowl. Give it a good stir, and then add vanilla extract.

Make sure to mix until everything is well combined. Next, add yeast and pour in coconut milk.

Add some warm water and continue mixing until it forms a paste. Now, add butter and mix until it's fully incorporated.

Let the batter rest for an hour, checking the consistency to make sure it's just right.

In a pan, heat some oil over medium heat. Scoop the batter with a spoon, drop into hot oil, and cook until it turns golden brown. Remove. Serve hot.
